Hello, day 27 of the 30-Day Nutrition Challenge. Here’s another recipe to keep you going strong all the way to the finish. These lentil burgers are a great source of protein and fiber, and who doesn’t enjoy a nice burger? Serve these with a side salad and enjoy. Be sure to check any condiments you use to make sure they comply with your chosen challenge.
What Makes This Recipe Healthy?
The lentils! Per 100g, lentils contain 26 grams protein, 30 grams fiber and 40% of your daily requirement of iron. All of which are great news, especially for full-time vegetarians who might struggle to find enough protein and iron. You will also get healthy fats from the peanut butter and pumpkin seeds and a nice balance of vitamins and minerals from the onions, red bell pepper and lettuce … even more if you serve the lentil burger with a side salad that includes chopped-up veggies!
This patty is already gluten-free if you use a gluten-free soy sauce. To make this burger completely gluten-free, serve with a gluten-free bun, bread, or pita pocket.
